tumis kangkung

Tumis kangkung is Indonesian for water spinach stir fry. In this recipe, the water spinach is stir fried together with other ingredients such as shallots, garlic, chilies, tomato and flavored with tauco and soy sauce. If you can not find kangkung, you can replace it with wild spinach. Wild spinach has the same long-steal as kang kung and is also nice to prepare it using the recipe below.

Tumis Kangkung Tauco – Water Spinach Stir Fry with Tauco


  • 400 grams water spinach (washed and cut)
  • 2 tablespoons oil
  • Seasoning:
  • 20 grams tauco
  • 1 big onion or 6 shallots, slice thinly
  • 3 cloves garlic, slice thinly
  • 2 bird eye chilies, slice thinly
  • 2 curly/big red chilies, slice thinly
  • 1 chopped tomato
  • 2 tablespoons soy sauce
  • 2 cm galangal, crushed
  • 1 teaspoon ginger
  • 2 daun salam (Indonesia bay leaves)
  • 1 tablespoon ready-made vegetable stock


  1. Heat the oil, then saute garlic, onion or shallots, chilies, galangal and ginger until fragrant
  2. Add tomatoes, tauco and bay leaves
  3. Add a little water, and vegetable stock, cook until boiling
  4. Add water spinach and cook until wilted
  5. Add soy sauce and mix until all ingredients have incorporated
  6. Ready to Serve

Tips & Notes:

Serve tumis kangkung with white rice, tempeh goreng (fried tempeh) and sambal If you can not find tauco, replace tauco with 1 teaspoon terasi/belacan (Indonesian shrimp paste) or 3 tablespoons fish sauce (this would not suitable for vegetarian or vegan)
