Sambal terasi or sambal belacan is a typical Indonesian spicy chili sauce that is very popular and became the pride for Indonesian culinary. There are 2 variations of sambal terasi, raw and fried sambal terasi. The recipe below is for fried sambal terasi.

Sambal Terasi – Sambal Belacan

Cook Time: 15 minutes

Total Time: 25 minutes

Serve: 2 cups

Sambal Terasi – Sambal Belacan


  • 15 curly/big red chilies
  • 5 bird eye chilies
  • 4 red onions
  • 2 cloves of garlic
  • 1,5 tablespoon shrimp paste
  • 1 tablespoon brown sugar
  • 2 medium red tomatoes
  • 3 tablespoons tamarind water
  • 2 cm galangal, crushed
  • 2 daun salam (Indonesian bay leaves)
  • 1/2 teaspoon salt
  • 100 ml water
  • 3 tablespoons of cooking oil to fry the sambal


  1. Blend chilies, onions, shrimp paste, brown sugar and tomato in a food processor to form a paste. Do not over blend, the paste needs to be a little grainy.
  2. Heat the oil and then add the spice paste, bay leaves and galangal
  3. Add water, salt and tamarind water
  4. Stir continuously until water shrinks and thickens, turn off the heat and ready to be served
